Cooking with quinoa doesn’t just mean soups, side dishes and stews. It might sound unbelievable, but you can actually create delectable desserts with this wonder food. Aside from quinoa seeds, you can make use of derivative products such as quinoa flour, quinoa flakes and so on. Quinoa desserts are not just healthy, they taste sinfully delightful as well. Here are some recipes you can try when cooking with quinoa.
Quinoa Recipe #1: Pudding A La Quinoa
1/2 cup quinoa
1 cup water
2 cups low fat milk
2 ripe bananas, peeled and chopped
1/2 tbsp butter
2 tbsp sugar
Rinse and drain the quinoa prior to cooking.
In a bowl, mix water and quinoa and bring to a boil, stirring occasionally. Reduce the heat to a simmer, cover and let cook for 15 minutes or until all the liquid has been absorbed. Remove from heat and set aside.
In a blender, mix the following ingredients together: bananas, milk, sugar and a bit of salt. Blend until you get a thick and smooth consistency. Pour this mixture into the bowl with the quinoa. Mix them together and place on the stove top over medium heat. Stir the mixture while cooking to make sure the flavors are evenly distributed. Cook for about 10 minutes until you have a thick and creamy pudding.
When done, remove the bowl from the heat. Mix the butter in and a few drops of vanilla. Serve warm.
Quinoa Recipe #2: Quinoa Banana and Berry Parfait
1 cup quinoa
2 cups water
1 cup strawberries
1 cup blueberries
1 cup bananas
2 cups vanilla yogurt
Halve the berries and slice the bananas. Place in freezer bags and leave them in the fridge to cool overnight.
Rinse and drain the quinoa prior to cooking. In a pot, bring the quinoa and the water to a boil. Reduce the heat and allow to simmer for about 15 minutes until all the liquid has been absorbed. Remove from heat and allow to cool.
Once the quinoa has cooled sufficiently, it’s time to assemble your dessert. In a parfait glass, layer quinoa, yogurt, banana, yogurt, blueberries, yogurt, strawberries and yogurt. Sprinkle confectioner’s sugar on top. Serve chilled.
Quinoa Recipe #3: Fruity Quinoa Fiesta
1 cup quinoa
2 cups water
1 cup low fat milk
1/2 cup honey
1/2 cup crushed nuts (almonds, cashew, walnuts, etc.)
2 cups mixed fruits (berries, bananas, caramelized apples, etc.)
Rinse and drain the quinoa prior to cooking. In a pot, add the quinoa, 2 cups water, a dash of salt and a pinch of cinnamon for flavor. Bring the mixture to a boil over medium to high heat. Reduce the heat to a simmer. Keep covered and allow to cook for about 15 minutes until all the liquid has been absorbed.
Add the low fat milk and stir. Leave the lid off for 10 minutes while you let it simmer. Then, add the rest of the ingredients - the nuts, the fruits, and honey. Mix evenly and allow to simmer for another 10 minutes until you achieve a thick and creamy consistency. Serve warm.
